AILI Vanilla Cream Cheese Muffins

  • 1/2 Cup And I Like It™ Baking Blend (muffin)
  • 1/2 Cup Almond Flour (muffin)
  • 2 Tbsp Coconut Flour (muffin)
  • 1/2 Cup And I Like It™ FirstRate™ (muffin)
  • 2 tsp Baking Powder (muffin)
  • 1/2 tsp Baking Soda (muffin)
  • 2 1/2 Tbsp Butter, melted (muffin)
  • 1 tsp Vanilla Extract (muffin)
  • 1/2 Cup Almond Milk, Unsweetened (muffin)
  • 2 Tbsp Sour Cream (muffin)
  • 2 Eggs, large (muffin)
  • 8 oz. Cream Cheese, softened (Cream Cheese Topping)
  • 1/4 Cup AILI FirstRate™ (Cream Cheese Topping)
  • 1 Egg, Large (Cream Cheese Topping)


  1. Preheat oven to 350F.
  2. Line a muffin pan with paper liners or grease with butter.
  3. In a large bowl, mix the Baking Blend, almond flour, coconut flour, FirstRate™ baking powder & baking soda.
  4. In a medium bowl combine butter, vanilla extract, almond milk, sour cream, and 2 eggs.
  5. Add the wet mixture to the dry mix & combine just until incorporated.
  6. Fill each muffin cup with 2 Tbsp of batter.
  7. In a small bowl, combine topping ingredients, cream cheese, FirstRate & egg.
  8. Spoon a slightly rounded Tbsp of the cream cheese topping on top of each filled muffin cup. Use a toothpick to gently swirl it into the batter.
  9. Bake for 20 - 25 minutes or until golden and the toothpick comes out clean.
  10. Turn off the oven and leave the door cracked open to let the muffins cool slowly inside the oven for 30 minutes. This is to prevent collapse.
  11. Store in the fridge.
