Storage and Preparation
Refrigerater: If not eaten with in 2 hours of purchase, put cheesecakes in an airtight container in the refrigerator and they will keep up to 4 weeks.
Freezer: If you don't want to eat the cheesecakes within 4 weeks they will freeze beautifully up to 3 months. Make sure you put the cheesecakes in an airtight freezer resistant container.
Preparation for eating:
From Freezer: Pull out of freezer then thaw in the refrigerator overnight or place on counters for up to 2 hours at room temperature.
Insulated Lunch Box: When pulled out of the freezer a cheesecake will defrost easily in an insulated lunch box. Keep cheesecake refrigerated or frozen until time to leave home. To keep cheesecakes cold away from home, include at least two cold sources in your insulated lunch box. You can use two frozen gel packs or combine a frozen gel pack with a frozen juice box or frozen bottle of water. Freeze gel packs overnight to assure your cheesecake is ready to eat around 2pm snack time!
