These keto-friendly, low carb, gluten-free, lemon bars are made with And I Like It™ FirstRate™. Our all-natural sweetener alternative. They have a creamy rich filling poured over a shortbread cookie flavored crust.

Ingredients
  

Crust

  • 2 TBSP butter
  • 3/4 Cup almond flour
  • 3 TBSP And I LIke It™ FirstRate™
  • 1.5 tsp vanilla extract

Filling

  • 1/2 Cup butter
  • 3/4 Cup FirstRate™
  • 1/2 Cup fresh lemon juice
  • 1/4 Cup lemon zest
  • 6 egg yolks
  • 1 tsp xanthan gum

Instructions
 

  • Preheat the oven to 350°F. Butter or use olive oil spray to grease an 8x8 pan.
  • Melt the butter in the microwave or a small saucepan. Add the almond flour, FirstRate, and vanilla to the melted butter. Stir until fully mixed.
  • Press the dough evenly along the bottom of the pan.
  • Bake for 15 minutes or until lightly golden.
  • While the crust is baking, in a small saucepan on low heat, melt the butter for the filling. Whisk in the FirstRate, lemon juice, and lemon zest until dissolved.
  • Whisk in the egg yolks one at a time then turn the stove to medium heat for 1-2 minutes stirring continuously.
  • Vigorously whisk in the xanthan gum until smooth.
  • Pour the filling over the pre-baked crust and spread out evenly in the pan.
  • Bake the bars for 15-20 minutes.
  • Remove and cool in the refrigerator for 1 hour.
