- 1 lb Ground Beef
- 2 Tbsp AILI Taco Seasoning
- 10 oz Can of Fire Roasted Diced Tomatoes
- ½ tsp Salt
- ½ Cup Fiesta or Mexican Blend Cheese, shredded
- 10 oz Cauliflower Rice, steamed and squeezed of excess water
- 2 Tbsp Avocado Oil
- 1 Cup shredded mozzarella cheese
- 4 Green Bell Peppers, large (about 7oz each)

- 1 tbsp Cilantro, for garnish
- 1 wedge lime, for garnish
Preheat the oven to 450F.
In a large skillet add the ground beef and sprinkle with the taco seasoning cook for about 6-8 mins until brown.
While the meat is cooking slice the peppers in half and scoop the seeds and insides out. Place open on a baking dish and drizzle with avocado oil.
Once the ground beef is cooked, stir in the diced tomatoes, and salt to taste. Reduce heat to low and allow to come to a light boil.
Stir in the cauliflower rice and fiesta blend cheese. Remove from the heat.
Fill each half of the pepper with the skillet mixture (6oz per pepper half). Sprinkle the mozzarella over the tops and bake for 15 minutes.
