Ingredients
  

  • 1 lb Ground Beef
  • 2 Tbsp AILI Taco Seasoning
  • 10 oz Can of Fire Roasted Diced Tomatoes
  • ½ tsp Salt
  • ½ Cup Fiesta or Mexican Blend Cheese, shredded
  • 10 oz Cauliflower Rice, steamed and squeezed of excess water
  • 2 Tbsp Avocado Oil
  • 1 Cup shredded mozzarella cheese
  • 4 Green Bell Peppers, large (about 7oz each)

Optional

  • 1 tbsp Cilantro, for garnish
  • 1 wedge lime, for garnish

Instructions
 

  • Preheat the oven to 450F.
  • In a large skillet add the ground beef and sprinkle with the taco seasoning cook for about 6-8 mins until brown.
  • While the meat is cooking slice the peppers in half and scoop the seeds and insides out. Place open on a baking dish and drizzle with avocado oil.
  • Once the ground beef is cooked, stir in the diced tomatoes, and salt to taste. Reduce heat to low and allow to come to a light boil.
  • Stir in the cauliflower rice and fiesta blend cheese. Remove from the heat.
  • Fill each half of the pepper with the skillet mixture (6oz per pepper half). Sprinkle the mozzarella over the tops and bake for 15 minutes.
