AILI Lemon Posset

Ingredients

  • 1 Cup Heavy Whipping Cream
  • 1/4 Cup (35g) AILI FirstRate
  • 2 tsp Lemon Zest
  • 3 Tbsp Freshly Squeezed Lemon Juice

Directions

  1. In a medium saucepan, combine: heavy whipping cream, AILI FirstRate and lemon zest.
  2. Bring to boil through medium heat and stir until the sweetener is dissolved completely. This usually takes about 8-10 minutes. Each time the mixture begins to boil over, remove from heat while continuously stirring. Once the mixture begins to boil over, place the pot back on the heat. Repeat step 2 until FirstRate is completely dissolved.
  3. Remove mixture from heat to add and stir lemon juice. Set aside for 20 minutes to cool until top layer forms a skin-like texture.
  4. Strain mixture through a mesh strainer and discard lemon zest. Carefully divide the mixture into 3 individual jars or glasses.
  5. Refrigerate possets, covered, overnight.
  6. Uncover top, add desired garnish and enjoy!
  7. NOTE: You can garnish with berries before eating but keep in mind the added macros per serving.
