The process is simple. Gently heat the cream, lemon zest, and sweetener until it starts to bubble. Stir and keep an eye on it while the sweetener dissolves fully. Then remove from heat, stir in the lemon juice, and let it cool. Once it starts to thicken slightly, strain and pour into small jars or ramekins. Let it chill overnight—and enjoy the next day!

AILI Lemon Posset
Ingredients
- 1 Cup Heavy Whipping Cream
- 1/4 Cup 35g AILI FirstRate™
- 2 tsp Lemon Zest
- 3 Tbsp Freshly Squeezed Lemon Juice
Instructions
- In a medium saucepan, combine: heavy whipping cream, AILI FirstRate and lemon zest.
- Bring to boil through medium heat and stir until the sweetener is dissolved completely. This usually takes about 8-10 minutes. Each time the mixture begins to boil over, remove from heat while continuously stirring. Once the mixture begins to boil over, place the pot back on the heat. Repeat step 2 until FirstRate is completely dissolved.
- Remove mixture from heat to add and stir lemon juice. Set aside for 20 minutes to cool until top layer forms a skin-like texture.
- Strain mixture through a mesh strainer and discard lemon zest. Carefully divide the mixture into 3 individual jars or glasses.
- Refrigerate possets, covered, overnight.
- Uncover top, add desired garnish and enjoy!
