AILI Almond Muffins

Ingredients

  • 4 oz Cream Cheese
  • 8 Tbsp Butter
  • 1/4 Cup And I Like It™ FirstRate™
  • 4 Eggs, large, room temp
  • 1 Cup Almond Flour
  • 1 tsp Baking Powder
  • Dash Salt

Directions

  1. Preheat the oven to 350’F & grease muffin pan.
  2. In a large bowl, beat cream cheese, melted butter and FirstRate™.
  3. Add the eggs, one at a time and incorporate each.
  4. In a medium bowl, combine the almond flour, baking powder & salt.
  5. Add the dry ingredients into the creamed mixture and combine until well incorporated.
  6. Measure ¼ cup of batter into each muffin cup.
  7. Bake for 15 - 20 min until a toothpick comes out clean.
