AILI Lemon Bars

These keto-friendly, low carb, gluten-free, lemon bars are made with And I Like It™ FirstRate™. Our all-natural sweetener alternative. They have a creamy rich filling poured over a shortbread cookie flavored crust.

  • 2 Tbsp Butter (Crust)
  • 3/4 Cup Almond Flour (Crust)
  • 3 Tbsp And I LIke It™ FirstRate™ (Crust)
  • 1.5 tsp Vanilla Extract (Crust)
  • 1/2 Cup Butter (Filling)
  • 3/4 Cup FirstRate (Filling)
  • 1/2 Cup fresh lemon juice (Filling)
  • 1/4 Cup lemon zest (Filling)
  • 6 Egg Yolks (Filling)
  • 1 tsp Xanthan Gum (Filling)


  1. Preheat the oven to 350F. Butter or use olive oil spray to grease an 8x8 pan.
  2. Melt the butter in the microwave or a small saucepan. Add the almond flour, FirstRate, and vanilla to the melted butter. Stir until fully mixed.
  3. Press the dough evenly along the bottom of the pan.
  4. Bake for 15 minutes or until lightly golden.
  5. While the crust is baking, in a small saucepan on low heat, melt the butter for the filling. Whisk in the FirstRate, lemon juice, and lemon zest until dissolved.
  6. Whisk in the egg yolks one at a time then turn the stove to medium heat for 1-2 minutes stirring continuously.
  7. Vigorously whisk in the xanthan gum until smooth.
  8. Pour the filling over the pre-baked crust and spread out evenly in the pan.
  9. Bake the bars for 15-20 minutes.
  10. Remove and cool in the refrigerator for 1 hour.
