AILI Taco Stuffed Peppers
Ingredients
- 1 lb Ground Beef
- 2 Tbsp AILI Taco Seasoning
- 10 oz Can of Fire Roasted Diced Tomatoes
- ½ tsp Salt
- ½ Cup Fiesta or Mexican Blend Cheese, shredded
- 10 oz Cauliflower Rice, steamed and squeezed of excess water
- 2 Tbsp Avocado Oil
- 1 Cup shredded mozzarella cheese
- 3 Green Bell Peppers, large (about 7oz each)
Optional
- 1 tbsp Cilantro, for garnish
- 1 wedge lime, for garnish
Instructions
- Preheat the oven to 450F.
- In a large skillet add the ground beef and sprinkle with the taco seasoning cook for about 6-8 mins until brown.
- While the meat is cooking slice the peppers in half and scoop the seeds and insides out. Place open on a baking dish and drizzle with avocado oil.
- Once the ground beef is cooked, stir in the diced tomatoes, and salt to taste. Reduce heat to low and allow to come to a light boil.
- Stir in the cauliflower rice and fiesta blend cheese. Remove from the heat.
- Fill each half of the pepper with the skillet mixture (6oz per pepper half). Sprinkle the mozzarella over the tops and bake for 15 minutes.
