AILI Taco Stuffed Peppers

Makes: 8 servings


  • 2 lb ground beef
  • 2 TBSP AILI Taco Seasoning
  • 10oz canned fire roasted diced tomatoes
  • ½ tsp salt
  • ½ cup shredded fiesta or mexican blend cheese
  • 10oz cauliflower rice, steamed and squeezed of excess water
  • 4 Tbsp avocado oil
  • 1 cup shredded mozzarella cheese
  • 4 large green bell peppers (about 7oz each)


  1. Preheat the oven to 450F.
  2. In a large skillet add in the ground beef and sprinkle with the taco seasoning cook for about 6-8 mins until brown.
  3. While the meat is cooking slice the peppers in half and scoop the seeds and insides out. Place open on a baking dish and drizzle with avocado oil
  4. Once the ground beef is cooked, stir in the diced tomatoes, and salt to taste. Reduce heat to low and allow to come to a light boil.
  5. Stir in the cauliflower rice and fiesta blend cheese. Remove from the heat.
  6. Fill each half of the pepper with the skillet mixture (6oz per pepper half). Sprinkle the mozzarella over the tops and bake for 15 minutes
